Eating a vegan diet does not take hours of planning every week

If you eat a starchbased diet with fruits and vegetables (and without oils) you don’t need to worry about protein at all: http://circ.ahajournals.org/content/105/25/e197.full and http://drmcdougall.com/misc/2007nl/apr/dairy.htm
There is no planning required in order to get all essential amino acids.
And you don’t need to worry about Omega-3 either: http://www.drmcdougall.com/forums/viewtopic.php?f=22&t=35660

Following a starch-based diet with fruits and vegetables (and possibly B12-supplement) - e.g. this diet: http://www.drmcdougall.com/ :
You don’t need to do hours of planning of your diet every week. And as you said, even if you would need this, convenience is no justification in order to needlessely harm and kill animals, which you do when you choose to consume a diet of animal foods instead of a vegan diet.

I would like to recommend http://www.vegankit.com/ and http://www.abolitionistvegansociety.org/
